Moroccan spiced lamb
for your slow cooker

Ingredients
1 brown onion, chopped
2 garlic cloves finely diced
500gm lamb (mince or chops)
1 tspn cumin powder
1tspn coriander powder
1tspn ground cloves
1 cinnamon stick.
1 x 400grm tin diced tomatoes, plus a can of water.
1/4 cup all-purpose flour
200 gm assorted vegetables (your faves)
Method
I used lamb chops in this recipe so will give instructions for chops only.
Put flour and powdered spices in a plastic bag - shake to mix. Then pop in the chops and shake to coat the meat in spice mixture.
In a heavy base frypan heat enough olive oil and fry the chops until browned about 5-8 minutes. Place in slow cooker. Add onions and garlic to the pan cook until just wilting, add to pan along with the cinnamon stick. Add the chopped vegetables plus the tin tomatoes plus one can of water.
Set the cooker on high and cook for two hours, check, then lower heat and cook extra hour or until tender.
Serve with fluffy rice, couscous or quinoa and warm flat bread. Top with a dollop of yoghurt and chopped mint.
If using lamb mince this would suit making meatballs, mix the spices into the mince and cook in the slow cooker but adjusting the time.
