Home-assembled Muesli

I’ve never been one for eating breakfast, much to my dear old mother’s horror.

The thought of soggy breakfast cereal or toast spread with something nutritious (Vegemite or peanut butter - definitely not jam) had no appeal. But come mid-morning I’d tuck into nearly anything or everything.

But now, at the other end of my years, I’ve had to adjust my living-style to keep the old body ticking over - and have finally found I MUST eat breakfast so that then I can eat all the pills the doctor’s prescribed!

After much experimentation, I’ve landed on muesli but with my own additives to make it more digestible and interesting - for me.

Here’s what I do. I start with a small packet of store-bought muesli and then I add dried fruit and nuts all of which I love. It’s never the same as it depends on what I have in the pantry and I confess right now, it can get quite expensive. But hey! I’m sure it must be good for me and it keeps me ‘regular’!

I tip the store-bought muesli into a plastic container and then add things I love from the list below:

EXTRA INGREDIENTS

All Bran and/or Rice Bubbles

Dried apricots

Dried apple

Dried mango

Dried figs

Sultanas or raisins

Sunflower seeds

Pumpkin seeds

Gogi berries

Cranberries

Whole almonds (toasted in MW or pan)

Banana crisps

METHOD

I then sit watching TV and cut the fruits into small pieces with a pair of kitchen scissors. It’s delicious sprinkled on yoghurt and also just eaten by the handful!
