Corn on the Cob with Lime Butter

100g of soft butter, I large chilli deseeded and finely chopped, 2 tablespoons of chopped fresh coriander and 1 teaspoon of grated lime rind.

Couscous & Feta Stuffing 

1/3 cup couscous soaked in ½ cup of boiling water for about 5 -10 minutes

Fluff up the couscous with a fork and add 80g of feta cheese, ¼ cup of shredded fresh basil and 2 teaspoons of grated lemon rind, season with cracked pepper.

(Delicious stuffing for pork or chicken.)

Easy Lemon Squeezy Tiramisu Dessert for 4 adults

You will need 1 cup of lemon curd for this dessert (recipe below).

Lemon syrup – combine juice of a lemon with 1/3 cup caster sugar with 2 tablespoons of water, heat until sugar has dissolved and it has a syrup consistency, then cool. 

In a bowl add 250g of mascarpone with 100mls of limoncello and whisk until combined

Cut 250g of sponge cake into small squares, store bought or homemade.

Divide half the cake into 4 glasses, drizzle with half the syrup and top with half the lemon curd and a dollop of the mascarpone mix. Repeat the process and refrigerate for 30 minutes to set.

Lemon Curd

4 egg yolks, 2/3 cup caster sugar, whisk well together until combined but not frothy. Pour into a clean saucepan and add  60 g of butter, 2 teaspoons grated lemon rind and 100mls of strained lemon juice. Stir constantly and bring to a simmer over medium heat. As soon as bubbles appear remove from the heat and keep stirring for a few minutes. Cool before using.
