Meals on wheels
Nic’s quickest snack for those who can’t wait till tea time
Our youngest daughter arrived in a rush having pre-warned us that she’d cook us a light meal when she got here. I must say I was pretty darned hungry when she arrived and thought I’d fade away before she could have anything ready to eat.
However, she produced this Morrocan-style taste treat in no time at all.
INGREDIENTS
1 onion finally diced
1 clove garlic finely diced
500g of lamb mince
1 tablespoon of cumin seeds
1/2 teaspoon of cayenne pepper
1 teaspoon of coriander powder (or other Moroccan seasoning mix)
Salt and pepper to taste
To serve
Hummus
Pomegranate arils*
Pomegranate molasses
Toasted pine nuts
Freshly chopped mint
Turkish bread rolls (or a French stick)
lightly toasted.
PREPARATION
Fry onion and garlic together with cumin seeds, add mince and spices and toss until cooked. This will only take a few minutes as the mince cooks quickly,
To serve spread a thick layer of hummus on the base of a serving dish, add the warm mince mixture to the top, sprinkle with pomegranate arils and, ideally, pomegranate molasses drizzled over the top. Sprinkle with toasted pine nuts and freshly chopped mint to complete a tasty dip to spread on toasted pieces of bread. It really IS delicious.

* Pomegranate arils (the bright red delicious seeds) are available in supermarkets in small punnets - if not in the fresh fruit section, then you’ll find them frozen in the freezer department.
