Lemon coconut slice

Here is a slice recipe, courtesy of the Australian Women’s Weekly, that I’ve tested and trialled to share with you.

Ingredients

250grms butter, chopped

430gm caster sugar 

4 x eggs

225 gm plain flour 

85grm moist coconut flakes (I used desiccated coconut)

2 x lemons zested and juiced

Icing sugar and double cream or yoghurt to serve.

Method

1. Preheat oven 180ЉC. Grease and line a 20 x 30cm slice pan.

2. In a large microwave bowl melt butter in 30 second bursts until liquid. 

3. Add sugar, whisk vigorously until combined. Make sure mixture isn’t too hot, add eggs one at a time. Mix well after each.

4. Sift flour over mixture and fold through carefully. Add coconut, lemon zest and 1/4cup lemon juice stir to combine.

5. Bake for about thirty minutes or until firm and golden brown. Remove from oven,  cool in pan and sprinkle the icing sugar over when totally cool. Serve with your preferred topping.
