Cabbage and sweet potato fritters

Breakfast, brunch or a light dinner - Here’s a quick ‘n’ easy recipe with the option of being gluten-free:

Cabbage and sweet potato fritters

INGREDIENTS 

2 cups shredded cabbage

1 cup grated sweet potato

1 small onion, finely chopped

2 large eggs

1/2 cup flour (or chickpea flour for gluten-free)

1 tspn salt

1/2 tspn black pepper

1/2 tspn paprika (optional)

Olive oil for frying


METHOD

In a large bowl, combine shredded cabbage, grated sweet potato, onion, eggs, flour, salt, pepper and paprika. Mix until well combined.

Heat olive oil in a skillet over medium heat.

Scoop 2-3 tablespoons of the mixture per fritter and flatten slightly in the skillet.

Fry for 3-4 minutes per side until golden and crispy.

Transfer to a paper towel-lined plate to remove excess oil.
