Marg’s Nut Biscuits

Ingredients:

  • 250g melted butter
  • 1½ cups raw sugar
  • 2 cups rolled oats
  • 2 eggs
  • 2 cups SR flour
  • 2 cups cornflakes
  • Big cupful peanuts

Method:

  • Beat eggs and sugar, add melted butter, dry ingredients. Mix well and add nuts and flakes last.

We were off to Bright for our annual family long weekend, pledging that we’d buy as much as we could in that town to support these communities that rely on tourism and who have been so severely hit by the bushfires.

But, we ALWAYS have to take Perry’s snags – that’s written in concrete. And I like to take some home-made biscuits. This is what I made.

Ingredients:

  • 250g melted butter
  • 380g SR flour
  • 2 heaped tbspn cocoa
  • 1 tspn salt
  • 2 eggs beaten with
  • 1½ cups raw sugar
  • 1 tspn vanilla essence
  • 2 cups unsalted peanuts

Method:

  • Add melted butter and beaten eggs and sugar to dry ingredients. Mix well and add peanuts.
