Scone Recipe 2 - Sconetime
Then he saw on ABC Landline a story about Sconetime in the little town of Cooroy in the Noosa hinterland. Once a month, often-lonely seniors come to the hall for scones and a cuppa in vintage china cups and saucers. (They don’t come in the cups, they put tea in them).
Everyone is very polite about Clem’s scones, but he thinks they might be humouring him. The general consensus is, while a bit more trouble, the Sconetime recipe wins the day.
- Wet Ingredients:
- 1 egg
- 2 1/2 cups milk
- 1 cup yoghurt
- 1 tsp vanilla essence
- Dry ingredients:
- 125 g chilled and grated salted butter
- 1 kg SR flour
- 1½ tsp baking powder
- Combine wet and dry ingredients without over-mixing.
- Pat the dough onto a floured board, chop into pieces, and bake – same as Muriel’s method.
