Orange Tea Cake

1 large orange (zest and juice)

2 eggs

125 gm softened unsalted butter

3/4 cup castor sugar

225 grms self raising flour

Ingredients - icing

2 cups icing sugar
-
1 teaspoon melted butter
-
1 tablespoon fresh orange juice (from an extra orange)

1 tablespoon orange flavoured liquor
-
1 tablespoon chopped candied/sugared orange peel.
Method:

Pre heat oven to 190º, butter and line a 20cm ring tin. I only have a square 20cm.

Combine all cake ingredients in a food processor and blend for two minutes until smooth and creamy.

Pour into the prepared tin and bake for 30-35 minutes.

Leave in tin for five minutes before turning onto a wire rack.

Cool before icing.

Method - icing
-
Beat all ingredients until smooth (NOT the peel).

Stir in the peel.

Warm icing over hot water until it thins and pour over the cake.
