  • Ingredients - cake
  • 1 large orange (zest and juice)
  • 2 eggs
  • 125 gm softened unsalted butter
  • 3/4 cup castor sugar
  • 225 grms self raising flour
  • Ingredients - icing
  • 2 cups icing sugar
  • 1 teaspoon melted butter
  • 1 tablespoon fresh orange juice (from an extra orange)
  • 1 tablespoon orange flavoured liquor
  • 1 tablespoon chopped candied/sugared orange peel.


  • Pre heat oven to 190º, butter and line a 20cm ring tin. I only have a square 20cm.
  • Combine all cake ingredients in a food processor and blend for two minutes until smooth and creamy.
  • Pour into the prepared tin and bake for 30-35 minutes.
  • Leave in tin for five minutes before turning onto a wire rack.
  • Cool before icing.
  • Method - icing
  • Beat all ingredients until smooth (NOT the peel).
  • Stir in the peel.
  • Warm icing over hot water until it thins and pour over the cake.
