More peaches - #3 Bellini Cocktail
- 4 ripe peaches
- 1 bottle sparkling wine.
- Peel peaches, remove pits.
- Puree in blender until smooth.
- Store in fridge for thirty minutes until chilled.
- 1/4 cup (20ml) peach puree into flute glass, gently pour in sparkling wine so as not to overflow.
- Stir gently top up glass, garnish with a peach slice.
- Substitute wine for soda water or non alcholic sparkling wine.
