  • 4 ripe peaches
  • 1 bottle sparkling wine.


  • Peel peaches, remove pits.
  • Puree in blender until smooth.
  • Store in fridge for thirty minutes until chilled.
  • 1/4 cup (20ml) peach puree into flute glass, gently pour in sparkling wine so as not to overflow.
  • Stir gently top up glass, garnish with a peach slice.
  • Substitute wine for soda water or non alcholic sparkling wine.
