Lemon Yoghurt Cake

Lemon Yoghurt Cake image

Ingredients:

  • 1 cup sugar
  • 2 eggs
  • The zest of 2 lemons
  • Juice of 1 lemon or 1/2 if it’s a particularly juicy one.
  • 3/4 cup oil ( I use olive oil)
  • 1 cup natural yoghurt (although I have also used Greek yoghurt)
  • 2 cups SR flour

Method:

  • 1. Mix sugar, zest, oil and eggs in a bowl with a fork till smooth.
  • 2. Add the remaining ingredients and mix until combined.
  • 3. Pour into a greased ring tin - I use a 22cm diameter tin.
  • Bake 35 minutes or until baked in centre.
  • Ice with lemon icing of your choice.
