Apple and oat slice

It’s apple and pear season - a great opportunity to use either of them in this recipe. Nice on its own in the lunch box or served with plain yoghurt and a cuppa.

Apple and Oat Slice

Ingredients

  • 1 1/2 cups plain flour
  • 1 cup of rolled oats
  • 1 cup of sugar
  • 1/2 cup desiccated coconut
  • 1 teaspoon cinnamon plus extra
  • 185g melted butter
  • 400g stewed apple or pear

Method

Preheat oven to 180ºC.

Mix all dry ingredients into a bowl and add melted butter. Stir well.

Add 2/3 of the mixture into a small greased tray and press down firmly. Sprinkle with extra cinnamon then spread over stewed fruit. Sprinkle over the remaining mixture.

Place in the oven bake for 30 - 35 minutes until golden. Cool in the tin and cut into squares.
